I was wondering if this would act like a persona game where if you play it right you can do everything in one playthrough or will this take multiple playthoughs to get everything

I doubt you'll be able to do everything in one playthrough. For example, there are multiple clubs but you can only join the battle team and one other.

Four roommates and two of the eighteen classes means 1224 different paths if you don't count doubling up on electives as doing the same thing and each elective the order does matter and changes the scene slightly.

I think it might take more than one playthrough. Slim chance.
